1/4 tsp each sea salt and ground black pepper divided

1 lb redskin potatoes scrubbed and cut in 1/2-inch cubes

1 lb green beans trimmed and cut into 1-inch lengths

8 oz white button mushrooms thinly sliced

1 1/2 tbsp balsamic vinegar

1 1/2 tsp Dijon mustard
